Here are a few awesome recipes you can make at home from Chef Dennis of Blue Bamboo in Jacksonville Florida!You’ve gotta get his book!!!
Pork Dumplings
8oz ground pork
6oz Napa Cabbage leaves, finely chopped
2 tsp finely chopped ginger
1 tbsp Shaoxing rice wine or dry sherry
1 ½ tbsp soy sauce
1 tsp salt
½ tsp freshly ground black pepper
3 tbsp finely chopped green onions
2 tsp sesame oil
1 tsp sugar
2 tbsp cold chicken stock
Combine ingredients until well mixed.
Place rounded tablespoon in middle of wrapper. Fold and seal with water. Eight folds is best!
Bring a large pot of water to a boil. Drop half of the dumplings into the water and stir once so they don’t stick together. When the water boils again, add 1 cup of cold water to the pot. Then when it boils again, add 3 cups of cold water. The third time the water boils, the dumplings are cooked. Remove them with a slotted spoon and repeat with the remaining dumplings. Serve immediately with small bowls of dipping sauce.
Dumpling Wrappers:
¾ cup bread flour
6 Tbsp all purpose flour
2 ½ ounces water, boiling
½ Tbsp neutral oil
Combine flours in food processor. Add oil and hot water to processor while running. Combine until dough forms. Turn out onto surface and knead 2 minutes until dough is elastic and smooth. Let rest for 1 hour. Cut dough in half, and then roll out into a 12 inch log. Cut log into 12 pieces. Roll into balls, and flour. Shape each dough ball into a 3 inch wrapper, with thinner sides than center.
Soy Dipping Sauce
3 Tbsp soy sauce
½ tsp sugar
1 Tbsp vinegar
Pepper to taste
Bring ingredients to a boil. Garnish with toasted sesame and green onions.
